Piperfield Pork - Middle White Pork & Garlic

Piperfield sausage producers are based in Northumberland and offer a small range of superb fresh and dried sausages made from Middle White pork. This is a rare breed and is often known as the 'Yorkshire Pig' because it is said to have originated in Keighley (home of Jack Scaife ).
The Pork & Garlic costs around £10 per kilo (in our haste to try them we forgot to weigh our pack before cooking them). They are actually made by Crombies of Edinburgh ( themselves one of our top 10 producers). The combination of superb rare breed meat and Crombies sausage know how is hard to beat. The sausages are made with at least 75% meat and are finely minced in the Scottish style. They cook with very little shrinkage and have a subtle taste of garlic.
We had half left over, we chopped them finely and added to a tomato sauce made with onion, garlic, canned tomato and sun dried tomato puree. We then mixed in 200g of cooked pasta shapes and baked them very slowly for 2 hours. A small amount of sausage had flavoured enough pasta for 3 - a testimony to the quality of the meat and the sausage making.
