Chorizo and broad beans
Chorizo and broad beans are one of the best early summer combinations. They work together on lots of levels. At the simplest try fresh, podded beans (double podded if they are tough), fresh bead and a ready to eat chorizo.
Up a level fry slices of cooking chorizo until hot and crisp, remove from the pan and quickly heat the podded beans, add the chorizo with a splash or wine and a few drops of red wine vinegar.
But my favorite combination is a summer risotto. A Risotto Primerva made with peas, beans, courgettes and topped with crispy slices of hot chorizo.
