Mashed roots
This is an easy and tasty way of incorporating vegetables into your sausage and mash. The quantities are approximate, use whatever you have but try to keep the proportions roughly equal.
It can be prepared ahead and reheated in the oven or microwave. If reheating a few tablespoons of double cream and a pinch of paprika will not go amiss.
250 g potatoes
250 g carrots
250 g swede
Butter and milk
2 - 3 tablespoons of double cream and a pinch of paprika (optional)
Salt and black pepper
Method
Peel the vegetables and chop into large dice.
Bring a large pan of salted water to the boil, add the swede and cook this for a few minutes
Add the remaining vegetables and cook until soft
Drain the pan and return it to the heat for 30 seconds to dry the vegetables
Mash the vegetables with milk and butter
Check seasoning and if using add double cream and paprika (if you plan to reheat the dish add these later)
